Here I am going to be making a Bacon and Spinach burger. True, it may not be a ‘real’ burger since I’m just using a classic brown bun, but it is what it is.

METHOD

  • 1 Bun; brown
  • Cooked Spinach; ~20g
  • Cooking oil; tallow, 3tbsp
  • Bacon; ~30g
  • Onion; 1, medium-sized
  • Pepper; suit to taste
  • Salt; suit to taste
  • Sauces; sweet

Cook the bacon under low-mid heat till browned.

Dice up the onion.

Once browned, add half of the onion to this, essentially frying it in its own fat.

Don’t let the fat become dry/ browned. By then it is too jerky for most sandwiches, which is what this essentially is.

Meanwhile, fry the cooked spinach in the oil using the remaining half-onion. It is to this that you will add spices to your tastes. I prefer plenty of pepper and a bit of salt, cheese, or milk- just enough for consistency. However, tastes vary, so know what is preferred(or just go crazy).

You could also use this stage to add the sauces to the spinach once cooked, mixing well in the pan.

I find the tastes to conflict too much and the burger a work to keep together if the ingredients are directly stacked, so I cut the bun twice, making sure the top and bottom are substantially thick. Of course, if you use proper buns for this, you could add a bun bottom if so inclined. I place the spinach on the bottom, and the bacon at the top.

I toasted the buns in the bacon grease for that extra crunchiness. Add on the sauces at this stage.
